How Cold Pressing Works
Cold pressing is a traditional, mechanical method of extracting olive oil without the use of heat or chemicals. The olives are crushed and gently pressed at temperatures below 27°C (80°F). This careful process preserves the oil’s natural flavor, aroma, and high levels of antioxidants and polyphenols — qualities that define a truly premium extra virgin olive oil.
